Six by Nico has reopened its Waring Street restaurant in Belfast after a major refurbishment, with a warmer look, a refreshed layout and a refitted signature open kitchen. The works refresh the group’s first restaurant outside Scotland while keeping the theatre of its six-course tasting menus.

The refit brings new upholstery, artwork and lighting to the dining room. The open kitchen, which puts the cooking in view of guests, has been rebuilt as part of the same programme.

Six by Nico is operated by Sixco, a Glasgow-based restaurant group founded by chef Nico Simeone, whose UK portfolio now spans 13 sites. Sixco reported revenue of £43 million for the year to June 2025, up from £28 million in 2023, and in 2024 its EBITDA rose 74 per cent to £10.1 million.

Belfast opened in 2019 as the brand’s first restaurant outside Scotland, and the group says the landmark opening helped pave the way for its wider UK expansion.

The first menu in the refreshed restaurant is American Murder Mystery, which runs until 15 November and invites diners to follow clues and decode messages through six courses, with dishes including Crispy Fried Chicken and Waffle, a Cuban Sandwich and New England Clam Chowder.

From 16 November the menu changes to A Christmas Carol, inspired by the Dickens tale, with a feast inspired by the Cratchit family and a chocolate orange finale.

The structural driver is estate refresh of an early site, keeping the Belfast restaurant current in its layout and kitchen while the group’s rotating tasting menu concepts continue to change.

“Belfast will always be a special part of our story. When we opened here, the support of the talented team that helped us get off the ground and the overwhelming support from local guests, gave us the confidence to grow further,” said Nico Simeone, founder of Six by Nico.

“This refurbishment is our way of continually investing back into the guest experience in Belfast. The new layout feels warm and inviting, with all the theatre, atmosphere and beautiful food people expect from Six by Nico,” Simeone added.

For the sector, the Waring Street refit shows a restaurant group reinvesting in an early-estate site to protect the guest experience as its tasting menus rotate.
